    TECHNIQUES USED

  • The Arborio rice is slowly cooked using the traditional risotto method, gradually incorporating warm seafood stock to achieve its signature creamy consistency while maintaining an al dente bite. The king prawns are expertly pan-seared to develop a caramelized exterior while remaining tender and juicy. The risotto is finished with butter and Parmigiano-Reggiano through the classic mantecatura technique, creating a silky, luxurious texture.
